Back to the work-a-day Thursdays. We went for simple & delicious this week after the high of a Zombie Wedding. You can't top it, so you just do something different instead.

This week we all converged on Eva's in old Roseville. I can't remember a time before there was an Eva's on Vernon Street. It's pretty much your typical family-run, simple Mexican restaurant. My dinner was a whopping $6.50 and they have RC Cola in their soda fountain. You gotta love that!

The chunky salsa on the table is good, but the crack is in the form of a very red, chock-full-of-red-peppers sauce in a squeezy bottle. At first taste you think, "man, that's hot". After the 3rd taste you can't stop slathering your food in it. So addictive and delicious.

You also get a fresh out the fridge iceberg lettuce salad. Now, I know - it's all about the mixed organic greens in salads, but there is something to be said about ice cold iceberg, giant slice of tomato, large portion of ranch dressing all served up in a old-style wooden salad bowl. Add some of the red pepper crack sauce and it's on!

Now the clear favorite of the evening was the shredded beef taco. This is the way they should be made! Lots of seasoned shredded beef, deep fried in a corn tortilla. Add a little cheese, lettuce and half moon slice of tomato and it's just about perfect.

So, if you have $10 burning a hole in your pocket, stop by Eva's. They obviously have other specialties as well, but really, go for the tacos. Extra hot sauce.
